Vegetable Kabobs

Indoors or outdoors, you can create colorful vegetable kabobs to serve to everyone at your dinner table. Get creative and add your favorite veggies to the stick, grill, bake or roast. The choice is yours.


  • 1 medium zucchini, thinly sliced
  • 4 button mushrooms
  • 1 large tomato, quartered
  • 1 grapefruit, peeled and cut into 4 segments
  • 1 Tbsp olive oil
  • 2 oz Loprofin Spaghetti
  • 1 jar (26 oz) chunky vegetable pasta sauce (from allowed list)


  1. Thread the prepared ingredients onto 2 skewers and lightly brush with oil.
  2. Grill over medium heat for 8-10 minutes, turning frequently.
  3. Meanwhile, boil the spaghetti for 8-10 minutes, or until just softened. Drain and place on a serving plate.
  4. Heat the pasta sauce and allow to cool slightly.

Serving Suggestion:

Serve the vegetable kabobs on top of the spaghetti and pour the sauce over.
