Jicama and Mango Salad

Low in protein but full of flavor. This creative salad blends crunchy Jicama with sweet Mango to create an amazing salad. Great by itself but also delicious over greens. This is a true favorite!


  • 1 large or 2 small Jicama, peeled, cut julienne
  • 3 mangos, peeled,sliced
  • 1 jalapeno, seeded, diced fine
  • 1 red onion, peeled, minced
  • 1 clove garlic, minced
  • Juice of one orange
  • Juice of one lemon
  • 2 kiwis, peeled,sliced
  • 2 Tbsp olive oil
  • Salt and pepper to taste
  • 1/4 bunch cilantro


  1. Mix garlic, orange and lemon juice, cilantro, and olive oil. Season with salt and pepper.
  2. Add remaining ingredients, toss lightly, serve.
