Summer Peach Pasta

Summer is fresh peach season! This summer pasta dish features Loprofin Fusilli combined with fresh herbs and species to create a delicious sweet and savory low protein entree.


  • 3/4 cup diced peaches
  • 1/2 cup diced yellow or orange peper (or 3 mini sweet peppers)
  • 5 cherry tomatoes
  • 1 Tbsp coconut oil
  • 112 g Loprofin Fusilli
  • 1/3 tsp cardamom
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 5 large basil leaves


  1. Cook pasta and drain.
  2. In a large skillet, heat coconut oil over medium heat.
  3. Add peppers and cook for 2 minutes. Add tomatoes and cook for 1 minute.
  4. Add diced peaches and cook for 1 minute (the riper the peaches, the sweeter and shorter cooking time - warm gently).
  5. Toss in spices to coat. Add pasta and toss. There should be enough coconut oil in the pan to lightly coat the pasta.
  6. Add salt and pepper to taste. Serve.
