Mushroom and Pepper Fajitas

Fill your low protein tortilla with this array of sautéed mushrooms and peppers. Quick and easy, this dish is filling and great for everyone at your table.

Ingredients (makes 4 fajitas)

  • 2 medium red bell peppers, cut into strips
  • 100 g (4 oz) fresh mushrooms, sliced (about 1 and 1/4 cup)
  • 1 medium red onion, sliced
  • 1 Tbsp olive oil
  • 1/2 tsp curry powder
  • 1/2 tsp chilli powder
  • 1/4 tsp cumin
  • 4 warm Low Protein Tortillas
  • 2-3 Tbsp salsa
  • 2-3 Tbsp fresh cilantro, chopped


  1. Fry the peppers, mushrooms and red onion in olive oil for 3-5 minutes.
  2. Add the spices and continue to cook for 2 more minutes or until vegetables are tender. Stir in the salsa and fresh cilantro and cook for 1-2 minutes.
  3. Place a few spoonfuls of the mixture into a flour tortilla and wrap to create a fajita.
