Beet & Lime Hummus

This low protein hummus-like dip features beets to give it a dazzling color. (Pre-cooked beets are available in the refrigerated section of many grocery stores.)


  • 4 beets (320 g), boiled and cooled (or pre-cooked from the grocery store)
  • 1 clove of garlic, crushed
  • Handful of fresh dill (any fresh herbs work well)
  • 2 Tbsp olive oil
  • Juice of 1/2 lime
  • Salt and pepper, to taste


  1. Blend all of the ingredients together until smooth, using a food processor or high-power blender. 
  2. Add more olive oil if you want a thinner consistency.
  3. Season with salt and pepper to taste.
