Network PKU 2006
The weekend of October 27th-29th marked second installment of Network PKU. With over 100 attendees from 22 states and Canada, this event was a huge success.
This year’s conference featured six interactive workshops led by professional chefs from Johnson & Wales University and two metabolic professionals. Four classes held in kitchen laboratories Classes explored the culinary world from a low protein view point. In addition Traveling with PKU led by Denver’s Metabolic Dietitian, Laurie Bernstein, MS, RD, FADA, explored solutions and suggestions to make living and traveling with PKU easier. Sandra Maltzman, MA, RD, from Applied Nutrition, helped attendees Make the Most of their Medical Food, with creative ideas to make formula more fun, palatable and exciting.
The highlight of this year’s program was Applied Nutrition’s own Iron Chef low protein cooking challenge. All members of the audience with a metabolic disorder were invited into the kitchen to battle it out by creating the best low protein dishes possible. Team Low Pro Phenoms vs. Team Low Pro Legends had 90 minutes to create two dishes graded on originality, taste, presentation, and phenylalanine content. The two groups worked diligently cutting, sautéing and creating fabulous culinary creations.

Network PKU Event & Conference, Denver, Colorado
On October 15-17th, the Network PKU Event and Conference
was held in Denver, Colorado. Network PKU was a fun
filled weekend designed to enhance everyone’s
cooking skills and motivation to stay on diet. It stemmed
from a video production created by the IMD team at Children’s
Hospital of Denver. This production was conceived and
produced to encourage lifelong dietary compliance for
individuals with PKU. This video affords the viewer
the chance to “meet” other individuals with
PKU. The individuals profiled have been successful in
remaining on diet or returning to diet. We hope that
by listening to their personal stories, illustrated
at various stages of life, will promote enthusiasm towards
dietary compliance. In addition, the video attempts
to demonstrate that staying on diet can be palatable
with some experimentation and ingenuity in the kitchen.
Finally, this video presents a glimpse of what life
would be like without newborn screening and dietary
treatment providing us an historical perspective of
how far we have come.
This innovative conference was sponsored by Applied
Nutrition Corp, and The Children’s Hospital of
Denver. The event was held at Johnson & Wales University
School of Culinary Arts. Individuals and families traveled
from 16 different states to take part in this one of
a kind event. In addition to the debut of the Network
PKU video, participants attended low protein cooking
workshops, taught by professional chefs from Johnson
& Wales. Featured classes included tips for making
easy low-protein breakfasts and delicious desserts as
well as instructional sessions for preparing creative
dishes with different herbs and spices.
