Island Rice

Get ready for a taste experience. This recipe is anything but ordinary and is party of flavors that will surely have your coming back for more.


  • 4 cups vegetable stock
  • 8 spring onions, finely chopped
  • 2 celery stalks, cut lengthwise, finely chopped
  • 1 tsp. Mrs. Dash
  • 10 oz Loprofin Rice
  • 1 tsp salt
  • 3 oz string beans, cut into 3 pieces
  • 2 medium tomatoes, cut into chunks
  • 5 oz pineapple rings, drained and cut into pieces


  1. Bring the stock to a boil in a saucepan over medium heat. Add the onions, celery and herbs. Boil for 2 minutes to flavor the liquid.
  2. Rinse the rice under sold water to remove some of the starch, add to the stock with the salt. Cook uncovered stirring occasionally for 8 minutes but allowing the rice to retain a moist consistency. Add more water if necessary.
  3. Stir the chopped tomato and pineapple pieces into the rice.

Serving Suggestion:

Serve topped with copped chives or spring onions and a green salad.
