Cranberry Relish

You don’t have to wait until Thanksgiving to enjoy this flavorful side dish. Cranberries a very low in protein and can add flavor and color to low protein meals. Can be serve with a side of pasta, as a salad topping or enjoyed on its own.

Ingredients:

  • 2 apples, washed, peeled, cored, and quartered
  • 2 oranges, quartered, peel left on
  • 1 lb fresh cranberries, washed
  • 1/2 cup brown sugar
  • 1 Tbsp prepared horseradish

Method:

  1. Put apples, oranges and cranberries through meat grinder or chop in food processor to medium coarse consistency.
  2. Place in a ceramic or glass container. Stir in brown sugar and horseradish.
  3. Leave to marinate for at least two days before using.
